OK, I've solved this using this tutorial here:

I changed one step in that process: I installed softMCCS from EnTech and read the EDID data directly from the monitor and then saved it to a Raylar dat file. I then read the dat file using the Phoenix EDID editor and changed the standard timing ID #1 to H1920 and 16:20 aspect ratio. I then saved the dat file, fired up the EnTech MonInfo program, opened the dat file and saved a new inf file. The new inf now identifies the monitor as 'Samsung SyncMaster (EDID Override)'. I installed the inf using the Device Manager, rebooted and - voila - I could now set the display resolution to 1920 x 1200.
But what a total PITA.
I find it completely incomprehensible that 1). Samsung has just flat out wrong data in the EDID of this monitor, and that 2). Microsoft insists that WHQL compliant video drivers limit themselves to what is reported from the EDID.
This is so laughably not 'it just works'.
